The wonders of Cheese

A couple of weekends ago, we went to a cheese making course with some of our friends. We learned how to make a Farmhouse, blue, feta and ricotta cheese.  We learned a lot about making cheeses and had a good time. It is actually quite easy to make. All you need is some milk (high quality milk) and some rennet, and of course some time and patience. The whole process of actually making the cheese is around four hours, then you need to let it sit and drain for at least a couple of hours if not over night and then you age your cheese. Depending on the cheese aging can talk anywhere from 5 weeks to 8 months or longer. Of course there is more that goes into than what I explained, but that's the basics of it.  We didn't actually get to make any of our own cheeses that day, but we helped out our teacher making hers.

Ricotta, which you should always make when making cheese because you get to use all of the extra whey. otherwise it is just going to waste. And who doesn't love a ricotta cheese??

 Hopefully we will make some cheese in the near future! Mozzarella is suppose to only take around 1 hour for everything- yummy!
